The Easiest Fresh Guacamole Recipe

Did I just hear that magic word… ‘fresh guacamole’? I mean, I’m always up for some chips and guacamole. And salsa. And baked burritos or a taco salad. Okay- I am always up for delicious Mexican food. You too? Then this post is for you.

With Cinco de Mayo tomorrow- it is a perfect time to enjoy one of our favorite guacamole recipes but let’s be honest- any day of the year is a good day for fresh guacamole. I am also sharing a fresh salsa recipe and favorite Mexican corn stew recipe below.

Salsa Fresco

Full of fresh chopped veggies and a whole lot of flavor- I love fresh salsa. This is a perfect one for topping a salad, baked burrito or taco with or just enjoying scoops of chips and salsa.

What I love about it: Fresh chopped everything makes for the best salsa. And it is perfect for topping anything from baked potatoes to scrambled eggs to salads.

Mexican Corn Stew

This is one of our favorite warm you spicy feel good soups. We enjoy it during chilly weather but also in the heat of summer – served chilled it is delicious. It is like a tortilla soup, but a vegetarian version full of nutrients.

What I love about it: This soup is full of fresh vegetables, beans and bits of sassy flavor depending on how you season it. So, you are serving something tasty but also something packed with hidden veggie goodness.

Sprinkle some crumbled tortilla chips & shredded cheese on top and garnish with sour cream and avocado if preferred – or leave off to keep it healthier. Either way- this soup is So. good.

The Best Fresh Guacamole

Seriously, I mean, guacamole is the best. But not all are created equal. The prepackaged store guac or the ones with a ton of added calories and fat from creams are not the cream of the crop (pun intended) We love our guacamole the freshest it can be which means making just before serving. If you can get it that far. You may need to double the recipe- 1 for ‘taste testing’ and one for serving.

What I love about it: It’s So good and so easy to customize to your favorite taste. We like to add some garlic sometimes- and sometimes more cumin for more zip. Go chunky when chopping the tomatoes and onion- or keep it finely chopped if preferred. It’s all about what you like.

We used one large avocado for a bowl that serves 3-4 people (okay, or maybe you just want to enjoy it as a meal haha)

Easy Fresh Guacamole

An easy and delicious fresh guacamole recipe that takes just a few minutes to make.

Ingredients

  • 1 large avocado Add more depending on how many servings you are making
  • 1/4 small onions
  • 1 handful small heirloom cherry tomatoes (or regular tomatoes) about 1/4-1/2 cup chopped
  • 1 handful cilantro – about 1/4-1/2 cup chopped
  • 1 tsp salt and pepper (to taste)
  • 1 sprinkle cumin (to taste)
  • 1/8 cup or squeeze lime juice more if you prefer more lime taste
  • 1 clove garlic chopped if desired

Instructions

  • Mash avocado until preferred texture.Dice onions, tomatoes, cilantro into chunks. You can leave them with larger chunks if you prefer or dice them small. Add fresh chopped garlic if you would like a little extra zip.Add salt, pepper and cumin to taste and then stir in the lime juice.Top with a sprig of cilantro to serve and enjoy!
